Guest guest Posted January 17, 2001 Report Share Posted January 17, 2001 * Exported from MasterCook * Madelines Recipe By :Patricia Wells, Food Lover's Guide to Paris, pg 224 Serving Size : 30 Preparation Time :0:00 Categories : Cookies Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 eggs 1 can sugar zest of 2 lemons -- grated 1 3/4 cups flour 3/4 cup unsalted butter -- melted and cooled 1 tablespoon unsalted butter -- to butter tins Place the eggs and the sugar in a large bowl. Using a whisk or an electric beater, mix until lemon colored. Add the zest. Flour in the flour and then 3/4 cup of the butter. Refrigerate for 1 hour. Preheat the oven to 375 degrees. Butter the madeline tins, then spoon in the batter, filling each about 3/4 full. Bake 10-12 minutes until golden brown. Remove the madelines from tins as soon as they are baked and set on a wire rack to cool.
