Guest guest Posted January 17, 2001 Report Share Posted January 17, 2001 * Exported from MasterCook * Chocolate Madelines Recipe By :Eating Well Dessert Cookbook Serving Size : 24 Preparation Time :0:00 Categories : Cookies Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large egg 1 large egg white 1 cup all-purpose flour 1/4 cup unsweetened cocoa -- ( Dutch process ) 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup buttermilk 3 tablespoons canola oil 3/4 cup sugar 1 teaspoon vanilla 1 teaspoon instant coffee 1 ounce bittersweet chocolate -- ( not unsweetened ) confectioner's sugar Preheat oven to 400 degrees. Spray a madeline pan with non stick cooking spray. Dust with flour and tap out excess.; set aside. Place the eggs and the egg whites in a mixing bowl and set the bowl in a larger pan of hot water to warm while you prepare the remaining ingredients. Stir the eggs occasionally. Sift the flour, cocoa, baking powder, baking soda and salt in a bowl; set aside. Combine buttermilk and oil and set aside. Take the egg bowl off the water, add sugar and beat with an electric mixer on high speed until the mixture is thickened and pale--about 5 minutes. The beaters should leave a ribbon trail when lifted. Blend in vanilla and cofffee or orange zest. With a rubber spatula, alternatley fold the dry ingredients and the buttermilk mixture into the egg mixture, making 3 additons of dry ingredients and 2 additions of liquid. Drop the batter by tablespoons full in to the madeline tin, filling each shell 3/4 full. Bake for 12-15 minutes or until the tops of the madelines spring back when touched lightly. Loosen the madelines in the tin. Immediately invert madeleines on to a wire rack to cool. If decorating with chocolate, melt it in a small plastic bag in the microwave. Snip a hole in the corner of the bag and drizzle in lines over the madelines.
