Guest guest Posted January 17, 2001 Report Share Posted January 17, 2001 * Exported from MasterCook * Orange Madelines Recipe By :Williams Sonoma Serving Size : 12 Preparation Time :0:00 Categories : Cookies Desserts French Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup Unsalted butter 2 Eggs 1/2 cup Honey 1/4 cup Sugar 1/2 teaspoon orange zest -- grated 1/8 teaspoon allspice 1/2 teaspoon Vanilla 1 cup flour Preheat oven to 400 degrees. Brush madeline pan with butter and dust with flour. Melt butter; set aside. In a large bowl combine eggs, honey, sugar, orange zest and allspice. Set over saucepan of warm simmering water and whisk until lukewarm. Remove bowl and beat with electric mixer until pale yellow until tripledd in volume, about 10 minutes. Add vanilla, reduce speed to low and gradually mix in flour. Transfer 1/3 of the batter to another bowl and gradually fold in melted butter. Return butter mixture to original bowl, fold in gently. Spoon into molds almost to top. Bake unti golden brown, aboout 12 minutes. Remove and cool. Sprinkle with confectioner's sugar. NOTE: For these and other madelines, you will need a madeline pan or tin. If at all possible, get a non sitck one. These are very easy and quick cookies. They are the shell shaped bite size cookies you see all over France.
