Warm and Crunchy Nut Sauce

Amount Measure Ingredient -- Preparation Method

3 ounces firm tofu -- cubed

1/4 cup onion -- chopped

1 teaspoon olive oil

1 garlic clove -- minced

1/2 teaspoon ginger root -- minced

1/4 green bell pepper -- finely chopped

1 tablespoon chunky peanut butter

1/2 cup water

1/2 teaspoon celery salt

2 tablespoons cashew pieces

 

In a saucepan, saute the onin and garlic in oil. Once the onion is tender, add

the ginger and pepper. Cook 1 minute more.

 

Stir in the peanut butter, then the water and celery salt. Stir until smooth.

 

Let this mixture simmer for about 5 minutes, adding more water, if necessary.

 

Add the tofu and cashews and heat through.
