Guest guest Posted January 15, 2001 Report Share Posted January 15, 2001 * Exported from MasterCook * Stuffed Anaheim Peppers Recipe By : Healthful Cooking, Mary Carroll, StarTrib, 8/10/00 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Vegetables Healthful Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large green Anaheim peppers 4 slices whole wheat or sourdough French bread 1/2 cup minced onions 1 cup minced mushrooms 2 tablespoons chopped black olives 1/2 cup grated low-fat Cheddar cheese 1 ounce crumbled goat cheese 2 tablespoons grated Parmesan cheese 3 tablespoons whole wheat bread crumbs Makes 4 servings. Stuffed peppers are a favorite family main dish. Here's a variation using Anaheim chiles, the long green mild peppers also used in Mexican cooking. Preheat oven to 400 degrees. Slice peppers in half lengthwise and seed. Heat oil in a 10-inch nonstick skillet. Add onions; cook 2 minutes, stirring. Add mushrooms and olives. Cook 5 minutes, stirring occasionally, or until mushrooms weep moisture. Remove from heat. Transfer to a medium bowl. Stir in Cheddar, goat and Parmesan cheeses. Stuff into pepper cavities. Top with bread crumbs. Place in lightly oiled baking dish. Cover and bake for 30 minutes, or until peppers are soft and cheese has melted. Brown 1 minute under broiler if desired.
