Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces firm tofu -- cut into 1 " cubes 1/4 cup olive oil 2 tablespoons red wine vinegar 1 teaspoon dried thyme 2 zucchini -- cut into 1-inch rounds 2 red onions -- cut into wedges 16 cherry tomatoes 2 green bell peppers -- cut into large squares 8 metal skewers juice of 1 lemon salt to taste pepper to taste In a large mixing bowl, combine the oil, vinegar, and thyme. Toss in the tofu and vegetables, and marinate in the refrigerator for at least 1 hour. Thread the tofu and vegetables on the skewers, alternating the items. Cook the skewers on a heated grill, occasionally basting with the remaining marinade, until the vegetables are slightly charred and crispy. Sprinkle with lemon juice, salt, and pepper. Description: " Tofu is the perfect meat alternative for shish kebobs. What follows is a basic recipe followed by several distinctive marinades. Experiment with different seasonal vegetables.
