Guest guest Posted January 14, 2001 Report Share Posted January 14, 2001 * Exported from MasterCook * Strawberries & " Cream " Recipe By : BH & G Low-Fat & Luscious Vegetarian, page 43 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 1/2 ounces low-fat ricotta cheese (1/2 of a 15-ounce container) 1 tablespoon honey 1/2 teaspoon finely shredded orange peel 2 cups sliced strawberries 2 tablespoons sugar 1 teaspoon balsamic vinegar Orange curls -- (optional) Balsamic vinegar, with its sweet pungent flavor, ages in wooden barrels for many years. Even though only a little is called for in this recipe, don't be tempted to substitute regular vinegar. The balsamic is what gives this dessert its interesting flavor. In a blender container or food processor bowl, place ricotta cheese, honey, and orange peel. Cover and blend or process until smooth. Transfer cheese mixture to a bowl. Cover and chill for up to 24 hours. For berries, in a small bowl combine strawberries and sugar. Let stand at room temperature for 1 hour or until a syrup forms. To serve, add the vinegar to the strawberries, tossing to combine. Divide berries and syrup among 4 dessert dishes. Top with chilled cheese mixture. If desired, garnish with an orange curl. Makes 4 servings. Preparation time: 15 minutes. Standing time: 1 hour. Chilling time: up to 24 hours. Per serving: 139 Calories; 5 G Total fat; 3 G Saturated fat; 16 MG Cholesterol; 68 MG Sodium; 20 G Carbohydrate; 1 G Fiber; 7 G Protein.
