Guest guest Posted January 14, 2001 Report Share Posted January 14, 2001 * Exported from MasterCook * Fruit & Nut Cereal Recipe By : BH & G Low-Fat & Luscious Vegetarian, page 26 Serving Size : 8 Preparation Time :0:00 Categories : Breakfast Fruits Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup cornmeal 1/2 cup cracked wheat cereal or bulgur 1/2 cup regular rolled oats 1/2 cup snipped dried apricots OR mixed dried fruit bits 1/3 cup coarsely chopped walnuts or pecans 1/8 teaspoon ground cardamom 1/8 teaspoon ground nutmeg 1/8 teaspoon ground ginger Stir together a batch of this cracked wheat cereal mix and store it in the refrigerator. A bowlful cooks quickly and really satisfies on those blustery, cold-weather days. In an airtight storage container stir together the cornmeal, cracked wheat cereal, rolled oats, apricots, walnuts or pecans, cardamom, nutmeg, and ginger. Cover and store in the refrigerator for up to 1 month. Makes 2 2/3 cups (8 servings). To cook 1 serving: In a small saucepan bring 1 cup water and a dash salt to boiling. Slowly stir in 1/3 cup cereal mixture. Simmer, uncovered, about 10 minutes or until desired consistency. Serve topped with skim milk and sugar. To cook 2 servings: Prepare as directed for 1 serving, except use 2 cups water and 1/8 teaspoon salt with 2/3 cup cereal mixture. Preparation time: 5 minutes. Cooking time: 10 minutes. 175 Calories; 4 G Total fat; 0 G Saturated fat; 1 MG Cholesterol; 686 MG Sodium; 32 G Carbohydrate; 3 G Fiber; 5 G Protein.
