Use this fruity dip as a sauce over slices of angel food cake or as a filling for cream puffs. In a small saucepan combine apple-cranberry juice cocktail and cornstarch. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat; cool. Stir the vanilla yogurt into the cooled mixture. Transfer to a serving bowl. Cover with plastic wrap and chill for 2 to 24 hours. Serve with fruit dippers. Makes about ten 2-tablespoon servings (1 1/2 cups). Keep the Color: When certain types of fruit, such as apples, pears, peaches, or nectarines, are cut and the flesh is exposed to the air, the fruit's flesh turns brown. But it's easy to avoid this unattractive change in color. After cutting the fruit, immediately submerge the sliced or cut fruit in a bowl of water and lemon juice. A tablespoon of lemon juice per each cup of water will do the trick. Blot the fruit dry with a paper towel just before arranging the fruit on your serving platter. Preparation time: 20 minutes. Standing time: 1 hour. Chilling time: 2 hours. Per serving and 1/2 of an apple: 66 Calories; 0 G Total fat; 0 G Saturated fat; 1 MG Cholesterol; 14 MG Sodium; 15 G Carbohydrate; 2 G Fiber; 1 G Protein.
