Guest guest Posted January 13, 2001 Report Share Posted January 13, 2001 It might be too cold right now to feel like having ice cream, so save this for when it warms up! * Exported from MasterCook * Banana Chip Ice Cream Recipe By :Recipes from a Vegetarian Goddess Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup half-and-half or soy cream 2 cups milk or almond milk 2 ripe bananas -- peeled, sliced 1 cup sugar or 1/2 cup honey 2 teaspoons Mexican vanilla extract 1/4 teaspoon xanthan gum (optional) 1/2 cup gourmet chocolate chips (optional) Combine the cream and milk in a blender with the banana slices, sugar, and vanilla. Cover and whip until the sugar is dissolved. Add the xanthan gum and whip until smooth and frothy. Pour into your ice cream maker and add the chocolate chips, if desired. Freeze according to the manufacturer's instructions.
