Banana Chip Ice Cream

1/2 cup half-and-half or soy cream

2 cups milk or almond milk

2 ripe bananas -- peeled, sliced

1 cup sugar or 1/2 cup honey

2 teaspoons Mexican vanilla extract

1/4 teaspoon xanthan gum (optional)

1/2 cup gourmet chocolate chips (optional)

 

Combine the cream and milk in a blender with the banana slices, sugar, and

vanilla. Cover and whip until the sugar is dissolved.

 

Add the xanthan gum and whip until smooth and frothy. Pour into your ice cream

maker and add the chocolate chips, if desired.

 

Freeze according to the manufacturer's instructions.

 

Take your banana treat out onto the back porch and enjoy the spreading warmth of

the longer spring evenings ...

and listen for the peepers.
