Tortilla Flats

4 tablespoons vegetable oil

3 cups refried beans

6 7-inch flour tortillas

2 cups double Gloucester or Monterey Jack cheese -- grated

1/2 head iceberg lettuce -- shredded

2 ripe avocados -- sliced

salsa

 

In a heavy skillet, fry the beans in the oil over moderate heat, making 6

" cakes " .

 

Warm the tortillas in the oven.

 

Slide each bean " cake " onto a tortilla. Sprinkle with cheese. Top with the

lettuce, avocado slices, and a spoonful of salsa. Serve immediately.
