Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 dried shiitake mushrooms -- up to 8 1 1/2 pounds asparagus -- up to 2 8 ounces Chinese wheat noodles or udon or linguine 2 scallions -- up to 3 cut into 2-inch lengths on the diagonal 3 medium carrots -- peeled and cut into thick 2-inch long matchsticks 1 tablespoon canol oil or peanut oil 1 teaspoon grated fresh ginger 2 teaspoons dark sesame oil 2 tablespoons natural soy sauce -- or to taste 1 teaspoon light brown sugar or Sucanat 1/3 cup chopped toasted cashews -- up to 1/2 4 servings Cashews add a delectable richness to this simple stir-fly. Combine the shiitakes in a shallow bowl with enough hot water to cover. Allow to soak for 20 minutes or so. Reserve the liquid, then remove the stems and slice the caps. Trim the woody bottoms from the asparagus stalks, and if they're not slender, scrape the bottom halves with a vegetable peeler. Cut the asparagus into 2-inch lengths on a diagonal. Cook the noodles in plenty of rapidly simmering water until al dente, then drain. Meanwhile, heat the canola oil in a wok or stir-fry pan. Add the carrots and stir-fry over medium-high heat for 2 minutes. Stir in the asparagus and ginger and stir-fry for another 3 to 4 minutes, or until the vegetables are tender-crisp. Stir in the scallions. Combine 1/2 cup of the shiitake soaking liquid with the sesame oil, soy sauce, and brown sugar in a small bowl, and stir together. Add to the wok along with the soaked mushrooms and noodles, and stir-fry for 3 minutes more. Serve at once, garnishing each serving with a sprinkling of cashew pieces.
