Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces extra-firm tofu -- frozen, thawed, drained, and crumbled 1/4 teaspoon soy sauce 2 tablespoons peanut butter 2 garlic cloves -- minced 1/4 teaspoon cumin 1/4 teaspoon powdered ginger 1 tablespoon vegetable oil, plus extra for baking 1 red bell pepper -- roasted, peeled, seeded, and diced 1 small hot chili pepper -- seeded and diced 1 teaspoon chili powder 1 red onion -- diced 1 carrot -- diced 1 cup winter squash -- diced 2 celery stalks -- diced 1 cup pinto beans -- cooked 1 cup red kidney beans -- cooked 1 to 2 cups vegetable stock salt to taste 1/4 cup fresh parsley sprigs -- minced In a medium-sized mixing bowl, combine the soy sauce, peanut butter, garlic, cumin, and ginger. Stir the crumbled tofu into the peanut butter mixture until the sauce is completely absorbed. On an oiled baking sheet, spread the tofu, and bake at 375F for 20 minutes. Stir well, and bake another 10 minutes. Set aside. Heat the 1 tablespoon of oil in a soup pot over medium heat. Add the peppers, chili, chili powder and onion, and cook, stirring, for 3 to 4 minutes. Add the remaining vegetables and saute 2 to 3 minutes more. Add the beans and enough stock to just cover the ingredients. Bring to a boil, season to taste with salt, and stir in the baked tofu. Cover and simmer over low heat for 10 to 15 minutes longer. Serve hot.
