Satay with Tofu

Amount Measure Ingredient -- Preparation Method

16 ounces extra-firm tofu -- frozen, thawed, and cubed

3 tablespoons soy sauce

2 teaspoons sesame oil

1 garlic clove -- crushed

1 red bell pepper -- cut in squares

1 yellow bell pepper -- cut in squares

8 to 12 fresh bay leaves

sunflower oil, for grilling

Sauce

2 scallions -- finely chopped

2 garlic cloves -- minced

1/4 teaspoon chili powder

1 teaspoon sugar

1 tablespoon white vinegar

2 tablespoons soy sauce

3 tablespoons crunchy peanut butter

 

Serves 4 to 6

 

Soak 8 to 12 wooden skewers in water for 20 minutes, then drain. This will

prevent them from burning on the grill.

 

In a large bowl combine the tofu with the soy sauce, sesame oil, and garlic.

Cover and marinate for 20 minutes.

 

In another bowl, mix the sauce ingredients together until well blended, but

still chunky.

 

Dtrain the tofu, and thread the cubes onto the soaked skewers with the pepper

squares and bay leaves.

 

Brush the sataays with oil. Broil or grill, turning the sticks occasionally,

until the ingredients are browned and crisp. Serve hot with the sauce.
