Guest guest Posted January 12, 2001 Report Share Posted January 12, 2001 * Exported from MasterCook II * Swiss Chard Salad - Lazio Recipe By : Italian Vegetarian Cooking/Paola Gavin Serving Size : 4 Preparation Time :0:00 Categories : Greens Italian Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large bunches of Swiss chard 3 tablespoons olive oil 1 tablespoon lemon juice 2 cloves garlic -- crushed salt and freshly ground black pepper Wash the Swiss chard and remove the thick ribs. Steam in a covered saucepan for 6 to 8 minutes, or until tender. Drain well and let cool slightly. Place in a salad bowl and dress with olive oil, lemon juice, garlic, and salt and black pepper to taste. Toss lightly and serve. Serves 4 to 6. - - - - - - - - - - - - - - - - - - NOTES : The Romans love salads of cooked green vegetables with olive oil, lemon juice and garlic.
