Swiss Chard Salad - Lazio

Amount Measure Ingredient -- Preparation Method

2 large bunches of Swiss chard

3 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic -- crushed

salt and freshly ground black pepper

 

Wash the Swiss chard and remove the thick ribs. Steam in a covered

saucepan for 6 to 8 minutes, or until tender. Drain well and let cool

slightly. Place in a salad bowl and dress with olive oil, lemon

juice, garlic, and salt and black pepper to taste. Toss lightly and

serve. Serves 4 to 6.

NOTES : The Romans love salads of cooked green vegetables with olive

oil, lemon juice and garlic. Green beans, broccoli, beet greens and

spinach are all served the same way. Always dress the vegetables

while they are still warm.
