Amount Measure Ingredient -- Preparation Method

4 eggs -- separated

4 tbsps melted butter -- (4 x 15ml) or margar

1 300g can creamed corn -- (10 oz)

250 ml buttermilk -- (9 fl oz/1 cup) or h

300 g cornmeal -- (10 oz/2 cups)

2 tsps bicarbonate of soda -- (2 x 5ml) (baking so

sifted together with

1 tsp salt -- (5 ml)

1 tbsp muscovado sugar -- (15 ml)

3 canned Jalapeno chillies -- sliced

2 tomatoes -- chopped

1 onion -- finely chopped

oil or butter -- to fry

 

Serves 4-6

Beat the egg yolks with the butter, creamed corn and buttermilk.

 

Whisk the egg whites until stiff. Combine all the ingredients gently. Heat

a little oil or butter on a seasoned griddle or heavy frying pan. Fry 7.5

cm/3 in pancakes, turning carefully to lightly brown both sides.
