Fry the onion, garlic and tomatillos. Add the passata. Stir around over a high heat for 2 minutes. Season and add the coriander (cilantro). In deep heat proof dish lay a couple of tortillas. Cover with some of the tomato sauce, then some of the crème fraîche, the mozzarella and then a sprinkle of chillies. Repeat the layers until all is used up. Bake at 200ºC/400ºF/Gas Mk 6 for 20 minutes and serve.
