Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces firm tofu -- pressed and cubed 1 1/2 cups Spicy Peanut Sauce 2 cups broccoli florets 2 cups asparagus -- halved 2 carrots -- cut into strips 1 red bell pepper -- finely chopped 2 medium scallions -- finely chopped lettuce leaves toasted sesame seeds, for garnish Marinate the tofu cubes in the Spicy Peanut Sauce for at least 30 minutes in the refrigerator. Meanwhile, in a steamer insert, steam the broccoli, asparagus, and carrots until tenderDrain the vegetables, and transfer them into a large bowl. Add the bell pepper and scallions, and toss. Add the tofu and peanut sauce, and toss again. Place a layer of lettuce on serving plates, and top with the vegetable-tofu mixture. Garnish with sesame seeds.
