Southwestern Salad

Amount Measure Ingredient -- Preparation Method

2 cups cooked brown rice

OR barley or other whole grains of your

choice

15 ounces canned black beans -- drained and rinsed

2 cups frozen whole-kernel corn -- thawed

1 red bell pepper -- chopped

1 small onion -- chopped

1/4 cup white wine vinegar -- or to taste

1/4 cup chopped fresh cilantro leaves

1 jalapeno chili -- minced

OR cayenne pepper -- to taste

1 teaspoon mild chili powder

 

Combine all ingredients in a serving bowl. For the best flavor cover and

refrigerate for at least 1 hour before serving to allow flavors to blend.

 

Yield: 6 to 8 servings, calories: 162, fat: 1g, fiber: 6g.
