Zippy Zucchini

Amount Measure Ingredient -- Preparation Method

2 pounds small zucchini -- (about 8)

3 tablespoons soy sauce

1 tablespoon Worcestershire sauce

2 tablespoons water

1 tablespoon brown sugar

1 tablespoon minced fresh ginger root

1 clove garlic -- minced

Generous pinch cayenne -- to taste

1 tablespoon toasted sesame seeds

2 green onions -- sliced thin

 

Cut each zucchini in half lengthwise, then slice crosswise into 1/4-inch

slices. Place zucchini and 2 tablespoons water in a microwave-safe dish

and microwave, covered, on HIGH 5 minutes or steam over boiling water about

10 minutes or until just crisp-tender. Drain.

 

Combine the remaining ingredients in a small bowl and stir into the

zucchini. Serve warm or at room temperature.

 

Yield: 4 to 6 servings, calories: 59, fat: 1g, fiber: 3g.
