Guest guest Posted January 10, 2001 Report Share Posted January 10, 2001 * Exported from MasterCook * Zippy Zucchini Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 136 Serving Size : 1 Preparation Time :0:00 Categories : Mirkin's 20/30 Fat & Fiber Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds small zucchini -- (about 8) 3 tablespoons soy sauce 1 tablespoon Worcestershire sauce 2 tablespoons water 1 tablespoon brown sugar 1 tablespoon minced fresh ginger root 1 clove garlic -- minced Generous pinch cayenne -- to taste 1 tablespoon toasted sesame seeds 2 green onions -- sliced thin Cut each zucchini in half lengthwise, then slice crosswise into 1/4-inch slices. Place zucchini and 2 tablespoons water in a microwave-safe dish and microwave, covered, on HIGH 5 minutes or steam over boiling water about 10 minutes or until just crisp-tender. Drain. Combine the remaining ingredients in a small bowl and stir into the zucchini. Serve warm or at room temperature.
