Two-Corn Green Chili

Amount Measure Ingredient -- Preparation Method

2 onions -- chopped

4 cloves garlic -- minced

1 green bell pepper -- chopped

1 tablespoon mild chili powder

1 pinch cayenne pepper -- or to taste

1/2 cup bouillon

1 cup frozen baby lima beans

4 oz canned chopped green chilies

1/2 pound fresh spinach -- rinsed

stems removed and leaves chopped

OR 1 box frozen chopped spinach -- thawed

1 cup frozen whole-kernel corn

30 ounces canned white beans -- undrained

2 cups cooked polenta

OR other whole grains of your choice

1/4 cup chopped fresh cilantro -- (optional)

 

Cook onions, garlic, bell pepper and seasonings in the bouillon in a large

saucepan over medium heat until softened, 5 to 10 minutes. Stir in the

lima beans and cook, covered, until beans are tender, 5 to 10 minutes. Add

the remaining ingredients and simmer, stirring occasionally, 5 to 10

minutes or until the spinach is wilted and the chili is hot.

 

Yield: 6 to 8 servings, calories: 213, fat: 1g, fiber: 11g.
