Guest guest Posted January 10, 2001 Report Share Posted January 10, 2001 * Exported from MasterCook * Sweet And Zingy Bulgur Salad Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 116 Serving Size : 1 Preparation Time :0:00 Categories : Mirkin's 20/30 Fat & Fiber Fruits Grains And Cereals Salads, Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups bulgur 6 cups boiling bouillon 1 fresh pineapple cut into bite-size pieces OR 11-oz. canned pineapple tidbits -- drained 4 ripe peaches or nectarines cut into 1/2-inch pieces 1 bunch green onions -- sliced 4 jalapeno chilies -- seeded and minced 2 limes -- Juice of 1/4 cup chopped fresh mint leaves 1/4 cup fat-free honey mustard salad dressing Cover the bulgur with the boiling bouillon and let soak 30 minutes, or until tender. Drain off any excess liquid. Combine bulgur with the remaining ingredients in a serving bowl.
