Guest guest Posted January 10, 2001 Report Share Posted January 10, 2001 * Exported from MasterCook * Sweet And Sour Tofu Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 129 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Fruits Grains And Cereals Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup canned pineapple chunks drained and juice reserved 3 tablespoons ketchup 3 tablespoons brown sugar 2 tablespoons cider vinegar 1 tablespoon soy sauce 1 tablespoon cornstarch 1/2 cup bouillon -- About 2 stalks celery cut into 1/4-inch diagonal slices 1 onion -- halved lengthwise and cut into 1/4-inch slices 1 clove garlic -- minced 1 red bell pepper cut into 1/2-inch chunks 1 green bell pepper cut into 1/2-inch chunks 1 cup canned baby corn cut into bite-size pieces 12 ounces packaged low-fat tofu -- cut into cubes 2 cups cooked barley OR other whole grains of your choice Make the sauce: Mix 1/3 cup of the pineapple juice, ketchup, brown sugar, vinegar, soy sauce and cornstarch together in a medium bowl. Set aside. Bring the bouillon to a boil in a large pot. Add the celery, onion, garlic and bell peppers and cook, stirring, until the vegetables are crisp-tender, about 5 minutes. Stir in the sauce mixture and cook, stirring, 1 to 2 minutes or until thickened. Add the pineapple chunks, baby corn and tofu and cook, stirring gently 2 minutes more. Serve over cooked whole grains.
