Guest guest Posted January 10, 2001 Report Share Posted January 10, 2001 * Exported from MasterCook * Quinoa Pilaf With Cherries Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 136 Serving Size : 1 Preparation Time :0:00 Categories : Mirkin's 20/30 Fat & Fiber Side Dishes Fruits Grains And Cereals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped 3 cups bouillon 2 teaspoons mild curry powder Grated rind of 1 orange 1 cup uncooked quinoa 1/4 cup dried cherries 1/4 cup chopped fresh flat-leaf parsley OR mint or cilantro Hot pepper sauce to taste -- (optional) Bring the onion, bouillon, curry powder and orange rind to a boil in a large saucepan. Stir in the quinoa and cherries, reduce heat and cook, covered, until the quinoa is tender, about 30 minutes. Stir in the parsley, mint or cilantro and hot sauce to taste.
