Vegetable Chowder

Amount Measure Ingredient -- Preparation Method

1 head broccoli -- chopped

3 medium stalks celery -- sliced thin

1 medium onion -- chopped

2 large russet potatoes -- peeled and chopped

2 cups water

1 teaspoon salt

1 1/4 cups vegetable or chicken-flavored broth from bouillon

1/2 cup all-purpose flour

2 cups nonfat milk

 

Heat broccoli, celery, onion, potatoes, water, salt, and broth to boiling in

Dutch oven; reduce heat. Cover and simmer for 10 minutes. Shake 1 cup of the

milk and the flour in tightly covered container; slowly stir into Dutch oven.

Heat to boiling. Boil and stir 1 minute. Stir in remaining milk. Heat over low

heat, stirring occasionally until potatoes are cooked through.
