lowfat lentil burittos

the amount of fat in this recipe depends upon the groceries: lowfat cheese,

lowfat tortillas. I, of course, would add chopped lettuce and fresh cilantro.

Palouse Burritos

Amount Measure Ingredient -- Preparation Method

1 cup lentils -- rinsed

2 cups water

1 small onion -- chopped

1 large garlic clove -- minced

1/2 teaspoon cumin

1/2 teaspoon salt

1 1/2 cups shredded reduced fat Monterey jack cheese

6 fat-free flour tortillas

hot sauce to taste

(Mexican or Gebhardt Louisiana style)

Optional: sour cream and salsa

 

Place lentils, water, onion, garlic and cumin in medium sauce pan. Bring to

boil, reduce heat, cover, and simmer until tender, about 25 minutes. Remove

lentils from heat and stir in salt. Spread 1/2 cup of the lentil mixture down

the center of each tortilla. Top with 1/4 cup cheese and hot sauce to taste (try

between 1/4 - 1/2 teaspoon for mild/hot). Roll tortilla up and place seam side

down in 9 " x 13 " pan. Cover with cookie sheet or aluminum foil. Bake for 25

minutes at 400 degrees.
