The media geniuses have done it again. Faced with winter's full force, it doesn't take a media proclamation for us to realize that this is the very best time for soup. Nothing offers better comfort to body and soul when coming in from the cold. Still, I don't wait until the cold winds begin to blow before I take out the soup pot. Soups hold a prominent spot in my culinary repertoire, any time of year. I regard them as just about the most rewarding, yet easiest things a cook can prepare. For this month's menu, I present one of my favorite soups, the Italian classic Minestrone. Teamed with focaccia bread and salad, it's the basis of a warming, satisfying meal. Making the soup and this one-rise flat bread is a perfect activity for a snow-bound Sunday; then you'll have leftovers to enjoy for the beginning part of the week. The green salad and fruit salad lend the meal some sunny notes to enliven the winter-weary palate. Recipes adapted from Vegetarian Soups for All Seasons and from the forthcoming Vegetarian 5-Ingredient Gourmet. - - - - - - - - - - - - - - - - - -
