Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces extra-firm tofu -- frozen and thawed 1/2 cup all-purpose flour 1/2 teaspoon salt 1/8 teaspoon pepper 1/4 teaspoon paprika 1/4 teaspoon dried thyme 2 tablespoons olive oil 1 1/2 tablespoons soy sauce 1 small onion -- sliced 1 garlic clove -- minced 1/2 teaspoon salt 1 1/2 cups red and green bell peppers -- thinly sliced 1 1/2 cups canned chopped tomatoes 1/2 cup water 2 teaspoons vegetable broth powder brown or white rice -- cooked to serve 4 In a paper bag, mix the flour, salt, pepper, paprika, and thyme. Shake well to mix. Slice the tofu into 1 1/2-inch strips, and place in the paper bag. Shake gently to coat the tofu. In a frying pan, cook the tofu strips in 1 tablespoon of the olive oil. When the tofu strips are evenly browned, sprinkle with the soy sauce. Remove the pieces and set aside. In a frying pan, saute the onions, garlic, and salt in the remaining olive oil until the onions are translucent, Add the peppers, and cook for 5 minutes llonger. Add the tomatoes, water, and broth powder. Simmer for 10 minutes. Add the tofu, heat through, and serve with rice.
