Click the photo-point link on my web page <http://home.earthlink.net/~kitpath/> This is a BHG recipe * Exported from MasterCook * Mexican Fiesta Salad with Penne Recipe By :BHG Lightstyle Spring 2001 Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups dried penne or rotini pasta 1/2 cup whole kernel corn 1/2 cup light dairy sour cream 1/3 cup mild or medium chunky salsa 1 tablespoon snipped fresh cilantro 1 tablespoon lime juice 15 ounces canned black beans -- rinsed and drained 3 medium plum tomatoes -- chopped 1 medium zucchini -- chopped (1 cup) 1/2 cup shredded reduced fat Cheddar cheese Or 2 ounces cheddar cheese -- shredded COOK pasta according to package directions, adding the corn the last 5 minutes of cooking. Drain pasta and corn. Rinse with cold water; drain again. MEANWHILE, for dressing, stir together the sour cream, salsa, cilantro, and lime juice in a small mixing bowl. Set aside. COMBINE pasta mixture, black beans, tomato, zucchini, and cheese in a large bowl. Pour dressing over pasta mixture. Toss lightly to coat. Serve immediately or, if desired, cover and chill up to 24 hours. (After chilling, stir in milk if necessary to make desired consistency.) FYI - BULGUR IS A PARCHED, cracked wheat product. To make it, the whole wheat kernel is soaked, cooked, and dried. Then 5 percent of the bran is removed, and the remaining kernel is cracked into small pieces. Bulgur absorbs twice its volume in water when it is soaked. Because it is precooked, it cooks quickly or needs only a brief soaking before using. Store bulgur in an airtight container in a cool, dry place up to 6 months or indefinitely in the refrigerator.
