Corn Soup

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped

2 tablespoons oil

2 canned chipotle chiles -- sliced

2 10 oz cans creamed sweet corn

water

1 bay leaf

salt & pepper

 

In a saucepan cook the onion in the oil over moderate heat until golden. Add

the chipotles and cook for 1 minute.

 

Stir in the sweet corn and enough water to give it the consistency of half and

half.

 

Add the bay leaf and season well with salt and pepper. Simmer for 10 minutes.

Serve.
