Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 24 ounces extra-firm tofu -- frozen, thawed, and sliced into cutlets 1/2 cup soy sauce 1/2 cup brown sugar 2 teaspoons soy oil 2 garlic cloves -- minced 1 teaspoon ginger root -- minced 3 tablespoons brown rice vinegar 1/4 cup orange juice 1/4 teaspoon dry sherry pepper to taste 1 8 oz can sliced water chestnuts Marinating tofu is a simple and tasty way of adding tofu, infused with distinctive flavors, to your diet. Marinate the tofu for at least 1 hour. For more intense flavor, marinate the tofu in the refrigerator overnight. In a large bowl, combine the soy sauce, brown sugar, oil, garlic, ginger, vinegar, orange juice, sherry, and pepper. Mix well. Pour half of the marinade into the bottom of a 9 x 13-inch glass baking dish. Place the tofu slices in the marinade. Cover the tofu with the remaining marinade, and marinate at least 1 hour. In a frying pan, saute the tofu and water chestnuts in a couple of tablespoons of the remaining marinade until the tofu is browned on both sides.
