Gnocchi w/Spicy Carrot Sauce

Amount Measure Ingredient -- Preparation Method

8 ounces dried gnocchi or other fancy-shaped pasta

1/2 pound carrots, finely chopped -- about 1 1/2 cups

1 celery stalk -- finely chopped

4 cloves garlic -- finely chopped

1/4 teaspoon crushed red pepper

1 tablespoon fresh thyme or 1 tsp dried thyme

2 cups unsalted vegetable stock

1/4 cup red wine vinegar

1 tablespoon unsalted butter

1/4 teaspoon salt

freshly ground black pepper

 

Put the carrots, celery, garlic, red pepper, thyme and enough water

to cover them in a large skillet. Bring the mixture to a boil, then

cover the pan and reduce the heat to medium. Simmer the vegetables

until they are tender - about 20 minutes.

 

Pour 1 cup of the stock into the carrot mixture and cook until the

liquid is reduced to approximately /4 cup - about 10 minutes. Add the

remaining cup of stock and the vinegar, and cook until only 1/4 cu of

liquid remains - about 10 minutes more.

 

While you are reducing the second cup of stock, cook the pasta in 3

quarts of boiling water with 1 1/2 tsp salt. Start testing the pasta

after five minutes and cook until it is al dente.

 

Stir the butter, salt, and pepper into the sauce. Drain the pasta,

put it into a bowl, and toss with the sauce.
