Guest guest Posted January 8, 2001 Report Share Posted January 8, 2001 * Exported from MasterCook II * Gnocchi w/Spicy Carrot Sauce Recipe By : Time-Life Fresh Ways with Pasta Serving Size : 6 Preparation Time :0:15 Categories : Lowfat Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces dried gnocchi or other fancy-shaped pasta 1/2 pound carrots, finely chopped -- about 1 1/2 cups 1 celery stalk -- finely chopped 4 cloves garlic -- finely chopped 1/4 teaspoon crushed red pepper 1 tablespoon fresh thyme or 1 tsp dried thyme 2 cups unsalted vegetable stock 1/4 cup red wine vinegar 1 tablespoon unsalted butter 1/4 teaspoon salt freshly ground black pepper Put the carrots, celery, garlic, red pepper, thyme and enough water to cover them in a large skillet. Bring the mixture to a boil, then cover the pan and reduce the heat to medium. Simmer the vegetables until they are tender - about 20 minutes. Pour 1 cup of the stock into the carrot mixture and cook until the liquid is reduced to approximately /4 cup - about 10 minutes. Add the remaining cup of stock and the vinegar, and cook until only 1/4 cu of liquid remains - about 10 minutes more. While you are reducing the second cup of stock, cook the pasta in 3 quarts of boiling water with 1 1/2 tsp salt. Start testing the pasta after five minutes and cook until it is al dente. Stir the butter, salt, and pepper into the sauce.
