Crackers

Amount Measure Ingredient -- Preparation Method

1 1/2 Tablespoons Yeast

1 Cup Water -- warm

1 Teaspoon Sucanat

1/3 Cup Corn Oil

1 Teaspoon Sea Salt

3 1/2 Cups Unbleached White Flour

 

Combine the yeast, water, and Sucanat in a medium-sized bowl. Let sit until

foamy.

 

Add the oil, salt, and flour to the yeast mixture and knead lightly together.

Let rise at least 5 minutes.

 

Roll out thin. Put in a baking pan that has not been oiled. Cut or score into

squares or diamonds.

 

Bake at 450 degrees F - 500 degrees F until light brown.

Cheez Crackers

Amount Measure Ingredient -- Preparation Method

2 Cups Unbleached Flour

2 Teaspoons Baking Powder

1/2 Teaspoon Sea Salt

2 Tablespoons Corn Oil

3/4 Cup Water

1/2 Cup Nutritional Yeast

1 Teaspoon Garlic Powder

1 Teaspoon Chili Powder -- optional

 

Mix all ingredients into a stiff dough, adding more water as needed. Knead

lightly. Roll dough as thin as possible. Oil the top of the dough and sprinkle

with salt. Cut into squares. Bake 5 to 7 minutes at 375 degrees F or until

brown on both sides.

Coconut Crackers

Amount Measure Ingredient -- Preparation Method

1/3 Cup Coconut

1/4 Cup Barbados Molasses

1 Teaspoon Sea Salt

3 Tablespoons Corn Oil

3/4 Cup Water

3 Cups Unbleached Flour

 

Blend the coconut, molasses, salt, oil, and water in a blender until the coconut

is chopped. Pour this into the flour and mix into a dough. Roll out very thin

on cookie sheets. Score and prick with a fork. Bake at 275 degrees F until

well browned, about 45 minutes.
