Guest guest Posted January 7, 2001 Report Share Posted January 7, 2001 * Exported from MasterCook II * Pureed Black Bean Soup w/Rice Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 8 Preparation Time :0:20 Categories : Beans Lowfat Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups low-sodium canned black beans, rinsed -- drained 2 tablespoons minced lemon peel 3 1/4 cups low-sodium vegetable broth 1 medium onion -- chopped 4 cloves garlic -- minced 1 cup chopped celery 1 medium green bell pepper, cored -- diced 1 cup water 2 medium tomatoes -- chopped 1 teaspoon dried thyme 1 1/2 teaspoons ground cumin 1/2 teaspoon ground black pepper 3 tablespoons lemon juice 2 cups cooked rice 1. In a blender or food processor, puree beans, lemon peel, and 3 cups vegetable broth. 2. Heat remaining broth in a large saucepan. Add onion, garlic, celery, and bell pepper, and saute until onion begins to soften, about 4 minutes. Add water, tomatoes, thyme, cumin, black pepper, and lemon juice. 3. Stir in bean puree and simmer until soup is heated through, about 8 minutes. 4. Serve over rice in bowls.
