Guest guest Posted January 7, 2001 Report Share Posted January 7, 2001 * Exported from MasterCook II * Easy Green Bean & Red Pepper Soup w/Pasta Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 6 Preparation Time :0:15 Categories : Lowfat Pasta Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 1/2 cups broth 1 medium onion -- minced 2 cups chopped fresh or thawed frozen green beans (1 " lengths) 1 cup diced fresh or thawed frozen yellow wax beans 1/4 teaspoon ground black pepper 2 cups water 1 cup cooked small pasta shells 1/2 cup canned roasted red peppers 2 tablespoons minced fresh basil 2 tablespoons grated nonfat Parmesan 1. Heat 1/4 cup broth in a large pot. Add onion, green and yellow beans, and black pepper. Cover and simmer, stirring frequently, for about 12 minutes. 2. Add remaining broth and water, and bring to a boil. Reduce heat and simmer for 15 minutes. Stir in cooked pasta shells and roasted peppers and heat through, about 5 minutes. 3. Transfer to individual bowls, garnish with minced basil, top with Parmesan and serve.
