Corn & Shiitake Mushroom Soup

6 1/4 cups broth

5 scallion -- sliced

1 cup minced shiitake mushrooms

4 cups fresh, drained canned or frozen corn

1 teaspoon chili powder

1/4 teaspoon ground black pepper

1 tablespoon dried cilantro

 

1. Heat 1/4 cup broth in a large saucepan. Add scallions and saute

for 2 minutes.

 

2. Stir in remaining broth, mushrooms, corn, chili powder, and black

pepper. Bring to a boil, reduce heat, and simmer until corn is

tender, about 15 minutes. Stir in cilantro.

 

3. Transfer to individual bowls and serve.
