Guest guest Posted January 7, 2001 Report Share Posted January 7, 2001 * Exported from MasterCook II * Carrot-Garlic Soup Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 4 Preparation Time :0:20 Categories : Lowfat Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- chopped 4 cups low-sodium vegetable broth 16 cloves garlic, whole, unpeeled, and tied in a cheesecloth bag 1 medium carrot -- diced 2 medium potatoes -- diced 2 teaspoons minced fresh gingerroot 1 tablespoon orange juice concentrate 1 tablespoon honey 1/4 teaspoon ground black pepper 1. Combine onion, broth, garlic bag, carrot, and potatoes in a large saucepan. Bring to a boil, reduce heat, cover, and simmer until carrot begins to soften, about 20 minutes. Remove garlic bag. 2. Puree soup in blender or food processor and return to the saucepan. Stir in gingerroot, orange juice concentrate, honey and black pepper and simmer to heat through, about 5 minutes.
