Guest guest Posted January 7, 2001 Report Share Posted January 7, 2001 * Exported from MasterCook * Roasted Peppers Recipe By : Vegetarian Celebrations, by Nava Atlas, page 258 Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 green bell peppers 4 yellow bell peppers 2 red bell peppers 2 tablespoons olive oil 1 tablespoon red wine vinegar 1 dash salt Place the peppers on a foil-lined baking sheet under a preheated broiler. Broil on all sides,turning with tongs,until the skins are blackened, then remove. Divide the peppers between 2 paper bags. Fold the bags shut and let the peppers steam for 30 minutes, then slip the skins off. Remove and discard the stems, seeds, and fibers. Cut the peppers into strips. Place in a serving or storage container and toss with the remaining ingredients. Serve at room temperature.
