Guest guest Posted January 7, 2001 Report Share Posted January 7, 2001 * Exported from MasterCook * Tabouleh (Bulgur, Parsley, And Tomato Salad) Recipe By : Vegetarian Celebrations, by Nava Atlas, page 199 Serving Size : 10 Preparation Time :0:00 Categories : Grains And Cereals Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups medium-grind bulgur 2 pounds firm ripe tomatoes 1/2 cup firmly packed minced fresh parsley -- up to 3/4 3 scallions -- minced, up to 4 1/4 cup minced fresh mint leaves 3 tablespoons light olive oil 1 lemons -- juice of up to 1 1/2 lemons -- or to taste salt and freshly ground pepper -- to taste 10 to 12 servings Once considered exotic, tabouleh is now popular for its strong, fresh herbal flavor. Place the bulgur in a heatproof casserole dish and cover it with 3 cups of boiling water. Cover and let stand 30 minutes, or until the water has been absorbed. Fluff with a fork and let cool to room temperature. Add all the remaining ingredients and let stand at least 1 to 2 hours, refrigerated, before serving. Serve chilled or at room temperature.
