Hummus (Chick Pea Puree)

Amount Measure Ingredient -- Preparation Method

2 1/2 cups canned or well-cooked chick peas

1/3 cup tahini -- (sesame paste)

2 cloves garlic -- crushed

1 lemon -- Juice of

1 teaspoon ground cumin

salt and freshly ground pepper -- to taste

paprika -- for garnish

 

10 to 12 servings

 

This classic dip should be scooped up on wedges of pita bread.

 

Combine all the ingredients except the paprika in a food processor. Add

1/2 cup water and process until smoothly pureed. Transfer to a serving

bowl. Sprinkle with paprika. Serve at room temperature.
