Patsy's Own Peanut Butter Blossoms

1 3/4 cups flour

1/2 teaspoon salt

1 teaspoon baking soda

1/2 cup soy margarine

3/4 cup honey

1/2 cup peanut butter

1 egg

- or egg replacer

2 tablespoons soy milk -- or water

1 teaspoon vanilla

chocolate kisses

- or carob kisses

Yield: 28 - 36 cookies

 

Preheat the oven to 350F. Mix the flour, salt, and baking soda in a

bowl. Cream the margarine, honey, and peanut butter in another bowl,

and when smooth, add the egg, soymilk, and vanilla, and stir again

until smooth. Stir in the dry ingredients. Roll walnut-size pieces of

dough in the palms of your hands until you have round balls. Place on

an ungreased cookie sheet, and bake about 8 minutes. Then remove from

the oven and press a kiss into the middle of each ball until the

edges crack a little. Bake about 4 minutes more.
