Ellen * Exported from MasterCook Mac * Patsy's Own Peanut Butter Blossoms Recipe By : Cookin' Southern Vegetarian Style, Ann Jackson p181 Serving Size : 1 Preparation Time :0:00 Categories : Vegan Cookies & Bars Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 cups flour 1/2 teaspoon salt 1 teaspoon baking soda 1/2 cup soy margarine 3/4 cup honey 1/2 cup peanut butter 1 egg - or egg replacer 2 tablespoons soy milk -- or water 1 teaspoon vanilla chocolate kisses - or carob kisses Also in Heart of the Home, Ann Jackson (1995) p82 Yield: 28 - 36 cookies Preheat the oven to 350F. Mix the flour, salt, and baking soda in a bowl. Cream the margarine, honey, and peanut butter in another bowl, and when smooth, add the egg, soymilk, and vanilla, and stir again until smooth. Stir in the dry ingredients. Roll walnut-size pieces of dough in the palms of your hands until you have round balls. Place on an ungreased cookie sheet, and bake about 8 minutes. Then remove from the oven and press a kiss into the middle of each ball until the edges crack a little.
