Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces firm tofu -- drained and cut into 12 to 16 small rectangles 2 teaspoons leeks or scallions -- minced 1 1/2 teaspoons sugar 1/2 teaspoon salt 1 tablespoon sake or white wine 1 teaspoon fresh ginger root -- grated 2 tablespoons soy sauce 3/4 teaspoon sesame oil 3 to 4 tablespoons flour 1 egg -- beaten oil for deep frying 2 cups water 2 mushrooms -- finely diced 2 cups cooked brown rice 1/4 cup scallions -- minced dash red pepper flakes In a frying pan, heat the leeks, salt, sake, ginger, 1 tablespoon of the soy sauce, and 1 teaspoon of sugar in 1/4 teaspoon of the sesame oil. Stir well. Add the tofu and saute for 10 minutes on each side. Remove the tofu, reserving the liquid. Dust each piece of tofu with flour, and dip it in the beaten egg. In a wok, frying pan, or deep-fryer, heat the oil to 350F. Carefully add the tofu and deep-fry until goden brown. In a large saucepan, bring the water, remaining liquid, mushrooms, 1/2 teaspoon of the sesame oil, 1 tablespoon of the soy sauce, and 1/2 teaspoon of the sugar to a boil. Add the deep-fried tofu. Reduce the heat to medium, and cook, uncovered, for about 3 minutes. Divide the cooked rice among 2 large serving bowls. Top with the tofu and a sprinkling of scallions and pepper flakes.
