Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces extra-firm tofu -- frozen, thawed, and pressed 2 tablespoons soy sauce 2 tablespoons Dijon mustard 1 tablespoon sweet white miso 1 tablespoon maple syrup 1 tablespoon water 1 tablespoon sesame oil 1/4 teaspoon chili oil (optional) 3/4 to 1 pound mixed salad greens seasoned rice vinegar 20 strips roasted red bell pepper -- about 2 inches long and 1/2 inch wide In a shallow bowl, use a fork to mash and mix the soy sauce, mustard, miso, maple syrup, water, sesame oil, and chili oil until thoroughly blended. Set aside. With the long side of the tofu block facing you, cut the tofu into 8 slices, each about 1/2 inch thick. Cut each slice into two triangles. Dip the triangles into the sauce to coat all sides. Arrange the triangles on a broiling pan lined with aluminum foil. With the top oven rack 5 to 6 inches from the broiling element, broil the tofu triangles for 3 minutes, or until lightly browned and slightly crusty on the first side. Turn the triangles over, and brush with the remaining sauce. Broil until the second side iss browned. Set aside to cool slightly. Divide the mixed salad greens among four plates. Lightly pour the rice vinegar over the greens. On top of the greens, arrange four tofu triangles per plate. Place five red pepper strips over each serving, and serve.
