Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces firm tofu -- drained and cubed 1 pound fresh spinach leaves -- washed, stems removed 1 small red onion -- sliced 1/2 cup olive oil 3 garlic cloves -- minced 3 tablespoons lemon juice 1 teaspoon honey 1/2 teaspoon salt 1 teaspoon mustard powder 1/2 teaspoon black pepper 3 scallions -- chopped 1/2 cup pine nuts In a large salad bowl, arrange the spinach, red onion, and tofu in layers. In a small bowl, mix the olive oil, garlic, lemon juice, honey, salt, mustard, pepper, and scallions. Pour the dressing over the salad and toss. Chill for 15 minutes, and garnish with the pine nuts before serving. Description: " We've added tofu to the traditional spinach salad for even more health appeal.
