Saute Of Summer Vegetables With Corn

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 large onion -- finely chopped

2 garlic cloves -- finely chopped

1 jalapeno peppers -- (1 to 2)

(ripen red if possible)

seeded and sliced into thin strips

4 large ripe tomatoes -- coarsely chopped

2 cups fresh or frozen baby lima beans

6 small zucchini

cut into 1/2-inch dice

3 cups fresh corn kernels

(cut from about 6 ears of corn)

1/4 cup shredded basil leaves

1/4 cup finely chopped parsley

Salt -- to taste

Freshly ground black pepper -- to taste

 

4 to 6 servings

 

Here a quick, easy, and delicious dish for late summer. I like to serve

the vegetables in pasta bowls, along with some bread and a plate of sliced

tomatoes and sweet onions.

 

1. In a large saute pan, hear the oil over medium heat. Add the onion and

cook, stirring, for 5 minutes, until the onion has softened. Add the

garlic and peppers and saute, stirring, 2 minutes longer.

 

2. Add the tomatoes, lima beans, and zucchini. Cook over medium heat,

stirring frequently, for 15 minutes. Add the corn kernels, basil, parsley,

salt, and pepper and cook for 5 minutes longer. Serve hot or at room

temperature.
