Lee Evans & Chris Rankin - Giant Book of TOFU Cooking Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces firm tofu -- cubed 6 cups vegetable stock 1 tablespoon ginger root -- grated 1 1/2 cups carrots -- thinly sliced 1 1/2 cups leeks -- thinly sliced 2 cups bok choy, kale, or Chinese cabbage -- chopped 4 cups fresh spinach -- rinsed and chopped salt to taste scallions, for garnish -- chopped Serves 4 to 6 In a large saucepan, bring the vegetable stock to a boil. Add the ginger, carrots, leeks, and bok choy or other greens. Lower the heat and simmer for about 10 minutes, or until the vegetables are tender. Stir the spinach and tofu into the soup, and cook for another 5 minutes. Add salt to taste, and garnish with the chopped scallions. Tip: Add noodles of your choice for a more filling Very Green Soup.
