Guest guest Posted January 3, 2001 Report Share Posted January 3, 2001 * Exported from MasterCook * Curried Quinoa Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 138 Serving Size : 1 Preparation Time :0:00 Categories : Side Dishes Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped 3 cloves garlic -- minced 2 teaspoons mild curry powder 1 tablespoon minced fresh ginger 1 pinch cayenne pepper -- or to taste 2 1/2 cups bouillon 1 cup quinoa -- uncooked 1/2 cup golden raisins 1/2 cup dried apricots cut into small pieces 2 cups frozen green peas Cook the onion, garlic and curry powder in 1/2 cup of the bouillon in a large saucepan over medium heat until softened, about 5 minutes. Stir in the remaining 2 cups of bouillon, the quinoa, raisins and apricots. Bring to a boil, reduce heat and simmer 15 to 20 minutes or until most of the liquid is absorbed and the quinoa is tender. Stir in the frozen peas and cook 2 to 3 minutes or until they are thawed and heated through.
