Autumn Vegetable Soup

Green Salad with Pears, Walnuts, and Feta

Irish Soda Bread

The ingredients for this menu should be readily available from midfall

throughout the winter. The soup vegetables can be varied according to

whatever is available. Irish Soda Bread is a perennial favorite, and you

can make it over and over again with a different combination of flours each

time. (It's good for the soul to keep freshly baked breads coming out of

the oven regularly during the cold season.)

 

2 DAYS AHEAD: cut soup vegetables, except chard or greens, tomato, and pepper

 

1 DAY AHEAD: assemble soup through step 2 / clean and dry greens; toast

nuts for salad / combine all dry ingredients for the bread

 

SAME DAY: assemble and bake the bread / cut chard or greens, tomato, and

pepper for soup: heat and complete / prepare pears and assemble salad
