Guest guest Posted January 2, 2001 Report Share Posted January 2, 2001 * Exported from MasterCook II * White Beans & Spinach Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 4 Preparation Time :0:20 Categories : Beans Greens Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup low-sodium vegetable broth 1 medium onion -- chopped 3 cloves garlic -- minced 1/4 teaspoon cayenne 1 teaspoon paprika 1 teaspoon dried rosemary 1/4 cup chopped fresh parsley 2 medium tomatoes -- chopped 3 cups low-sodium canned Great Northern beans, rinsed & drained 1/4 teaspoon ground black pepper 6 cups chopped fresh spinach 1. Heat broth in large saucepan. Add onion, garlic, cayenne pepper, paprika, rosemary, and 2 Tbsp parsley. Saute until onion begins to soften, about 3 minutes. 2. Add tomatoes, beans, and black pepper. Reduce heat and simmer for 15 minutes. Stir in spinach and continue to simmer is just tender, about 7 minutes. Serve topped with remaining parsley.
